Selected responsibilities include the following duties: • Provide culinary leadership for all aspects of campus food production. • Possess expert knowledge in the areas of international cuisine, cooking techniques, food specifications, food safety, food service equipment, and food service budgeting. • Possess the requisite skills to teach and train the UDS culinary team. • Research, create, cost, and implement retail operation, board plan, concessions, and catering menus. • Possess computer skills sufficient to effectively utilize the Microsoft Suite (Outlook, Word, and Excel), Internet, and posses the ability to learn the software in the CBORD Food Service Suite. Primary Functions of the position: The successful candidate will investigate/develop menus and recipes to meet department needs and market trends; develop qualitative definitions for department food quality standards; investigate/resolve recipe and menu problems as needed; be responsible for testing new food items and food service equipment; develop specific definitions/methods to be used to ensure food’s wholesomeness and sanitary conditions; develop kitchen standards for labor, inventory levels, and production; determines, prepare, conduct, and document training programs for all aspects of UDS culinary staff professional development; provide leadership to UDS in the use of state-of-the-art cooking artistry, technology and methodology; and mentor UDS culinary professionals. Qualification and abilities are acquired through a combination of education and Executive Chef experience equivalent to a Bachelor of Science Degree in Food Service Management, Hotel/Restaurant Management, or Food Systems Management with a strong emphasis in the Culinary Arts or a degree from an accredited culinary arts college. This position requires a minimum of three years experience as an Executive Chef, including significant supervisory and total kitchen responsibility in a high-volume facility. Incumbent must be proficient with and capable of effectively using a wide variety of institutional and culinary kitchen implements, specialty tools, and equipment. Incumbent must possess functional computer skills in the Microsoft Suite. This position requires an alternate work week schedule. ServSafe certification is required within one year of hire date.
